cleanup: remove calibre and audiobookshelf stacks after ebooks migration [ci skip]

Both services migrated to unified ebooks namespace. Remove:
- Old stack directories and Terraform state
- calibre references from monitoring namespace lists
- calibre/audiobookshelf from operational scripts
